It is the true remedy and the way we want to make our chocolate. To be transparent about how cacao is grown and cared for at origin. For how it is treated and traded. The prices that are paid and the people that contribute along the way. Transparency about how we as chocolate makers roast and process the cacao. What we add and not in our chocolate. And how we try to let the flavors in the bean be the guide to the flavors in the chocolate we make. Transparency beyond certifications and beyond fashionable (and sometimes misused) marketing expressions. Transparency is our remedy.
