Harvest time in Österlen. To mark this special time of year, we have created a chocolate box to highlight three of Österlen's finest ingredients right now. The apple, the raspberry and, for the first time in praline form, the rapeseed. The apple cake praline, a crowd favorite for a long time tastes like a traditional Scanian apple cake with a pinch of cinnamon, a pinch of vanilla and sweet and sour apples. We get the raspberries from nearby Eriksgården. They are carefully boiled down in our raspberry naache with dark chocolate. Rapeseeds from local Gunnarshög's farm create the perfect crunch and nuttiness when mixed with our dark milk chocolate. What is good chocolate and fine chocolate?

Fine chocolate is relative, but it is still impossible to get away from the fact that both fine and good chocolate have to do with quality. For us, both quality and taste are the most important things in chocolate production.

We do something as unique as making all our chocolate from scratch, from cocoa beans. This means that the list of ingredients is short, sometimes just cocoa or cocoa and sugar. We believe that additives such as lecithins and natural flavors (and sometimes even added cocoa butter) just get in the way of the pure fine taste of high-quality cocoa. And since we make everything from scratch, we can choose entirely ourselves what we want in our chocolate.

We handpick cocoa producers that we have personally met and visited. And we collaborate with these producers to produce really fine cocoa that has been grown sustainably without child labor and pesticides. Cocoa that has been hand-harvested at just the right time and carefully handled until it turns into chocolate in your hands.

Is that the definition of luxury chocolate or exclusive chocolate? For us, artisanal chocolate of the highest quality is something of a luxury and the finest in chocolate.

How do you make pralines and how long does it take to make a praline?

Making pralines is a delicate craft that requires knowledge, skill and patience. First, you have to make the chocolate itself from cocoa beans, which takes a couple of days. The chocolate must then be melted and tempered. The ganache, i.e. what we fill the pralines with, must be mixed together and the time depends on what flavor it is. Berries must be picked, boiled and reduced, spices must be infused in cream, nuts must be roasted and chopped. Then everything must be mixed together, pralines must be dipped and hand decorated. It's almost dizzying to think how much time and how many people have actually collaborated for that single chocolate in your hand. So our advice is to enjoy it slowly and with a smile in good company.


How long do handmade pralines from Svenska Kakao last?

Since we do not add any preservatives and use pure fresh products such as cream, butter and milk, the praline must be consumed within 10 weeks for it to be delicious. Some chocolates last longer, it depends a bit on the composition and ingredients, so always let your sense of taste decide. But the rule of thumb is to eat them when you get them. The sooner the better
