Chocolate is made from cocoa, which comes from the cocoa fruit. So chocolate is made from a fruit! Which not many people know about.
When picked as a fresh fruit, it tastes very little chocolate and very much like a tropical fruit. Like a mix of passion fruit, lychee fruit and sweet ripe mango.
When you open a cocoa fruit, you get a cluster of cocoa beans surrounded by white pulp.
It is this white pulp that you can squeeze out and get cocoa fruit puree or juice.
So what can you do with fresh cocoa fruit?
Eat as it is - nature's best dessert.

Mix in yogurt, porridge or smoothies. Gets even better with the combination of cocoa nibs as an extra topping.
Cacao fruit in a cocktail - Cacao Bellini
Make a Bellini variant and pour some cocoa puree into the bottom of a champagne glass and top with champagne or dry prosecco. Stir and serve.
Make a cocoa pavlova with meringue, cream, cocoa fruit and cocoa nibs
At our chocolate factory, the Kakao pavlova is a popular dessert.
Bake a bunch of large meringues (preferably with chocolate swirl). Cut in half and sprinkle first soft whipped cream and then cocoa fruit puree. Top with cocoa nibs.
